While Merlin was there, In de Wulf was voted 'Best restaurant in Europe' by OAD and also featured on numerous 'world's best restaurant' lists. In 2014 Merlin moved back to the UK to launch 'Portland' restaurant to great critical acclaim, earning the restaurant a Michelin star within 9 months of opening at the age of 24. A year later he launched 'Clipstone', a neighbourhood restaurant in Fitzrovia which won the title of 'restaurant of the year' at the GQ awards as well as numerous 5 star reviews from critics such as AA Gill, Tom Parker Bowles and Jay Rayner. In 2018 Merlin devoted his year to working with charities such as Help Refugees, Food For Soul and the Felix Project and was subsequently included in Forbes '30 Under 30' list for Europe as well the Code's '30 under 30' list for Hospitality for the UK. It focuses predominantly on vegetables that Merlin has grown on a nearby farm as well as wild herbs and local game. There is no menu offered but the kitchen cooks a sequence of dishes for each diner based on whatever has arrived from the farm that morning. In January 2021 Osip was awarded a Michelin star, after only 8 months of actual trading. Osip is attached to a beautiful boutique hotel called Number One Bruton. It is housed in a five hundred year old building which was previously a Pharmacy. It has now developed into a bustling cafe/bistro by day and a wine bar by night. A daily changing blackboard menu offers a selection of dishes using homegrown ingredients from the farm and the tiny adjacent shop sells grocery items to take away as well as Roundhill coffee, organic wines and local cider. The Old Pharmacy does not take reservations and is walk-ins only.
